79. Brown Rice with Celery and Mushrooms

Final Outcome: Fantastic!!!


        I borrowed this recipe from pamphlet of a grocery store. I searched unsuccessfully online to include it in my post. It was a very different and yummy recipe.

Recipe:
Ingredients:
Brown Rice: 1 cup washed and set aside
Celery: 1 small bunch/ 1 cup chopped
Mushrooms: 1 pack quartered
Garlic cloves: 3-4 minced
Crushed pepper: 1 tsp
Italian seasoning: 1/2 tsp
Chili flakes: a pinch
Olive oil: 1 tsp
Salt to taste

Method:
1. Heat Oil in a deep pan. Add Onions and minced garlic. Cook for a couple of mins. Add chopped celery and cook till celery is soft.
2. Add chili flakes and quartered mushrooms. Cook for a couple of mins. 
3. Add washed brown rice and mix well. Add salt, pepper and Italian seasoning. Add 3 cups of water and cook covered till rice is cooked.
4. Uncover and mix well. Cook for a few more mins. Serve hot.

50. Mushroom Zucchini Pasta

Final Outcome:  We always love pasta!



Recipe:
Ingredients:
Pasta (Any kind): 3 cups cooked in water with salt
Mushrooms: Button mushrooms 1 pack chopped
Zucchini: 1 chopped
Garlic : 2 cloves chopped
Maida/ Flour: 1 tbsp
Milk: 1 cup
Italian seasoning: 3 tsp
Salt
Mozzarella cheese: shredded 1 tbsp
Butter: 1tbsp

Method:
1. Melt butter in a pan. Add garlic and stir. Do not burn the garlic. 
2. Add mushrooms and cook uncovered. After mushrooms are tender add chopped Zucchini. Let it cook till done.
3. Add salt and Flour/Maida to the above mixture and stir well for 2-3 mins. Add milk to it (I added milk with cream). Stir till it thickens. Add cooked pasta and mix well .
4. Add Italian seasoning and shredded mozzarella cheese and serve hot.

46. Fajita Burrito

Final Outcome: Yummy!

        This recipe is a little bit of a short cut compared to all other recipes that I have tried this year. I used ready fajita seasoning since it is very difficult to find all of the ingredients to make a perfect burrito.

Recipe: (serves 3-4 people)
Ingredients:
4 chapatis or roti rolled out of maida ( I used chapati)
1 pack of fajita seasoning (I used about 3/4th of the pack)
Button Mushrooms: 1 pack chopped
Paneer: 100 gms cubed
Onion: 1/2 finely chopped
Garlic cloves: 2
Carrot: 1 small chopped
Potato: 2 thinly sliced
Cheese grated: As per taste


This is the seasoning mix that I used.










Method:
1. Heat a little oil in a pan. Add chopped garlic and onion. Cook till onion is soft.
2. Add Carrot and Potato , cook covered till they are almost done.
3. On a tava heat a little oil. add paneer cubes and shallow fry from both sides till they turn golden brown.Set aside.
4. Add Mushrooms to the carrot and potatoes and cook uncovered stirring occasionally. Fry till all the water evaporates. Add Paneer and toss.
5. Add seasoning mix. ( I used about 3/4th pack to make 6 burritos)
NOTE: Do not add salt since seasoning contains all the ingredients.
6. On a tava place chapati and heat it from both sides. Place ready veggies at the centre sprinkle cheese and fold the chapati as shown in the picture.

33. Zucchini pasta with tomato mushroom sauce

        We always love pasta. This is a very good recipe. I have made some changes to the recipe. 

Recipe:
Ingredients:
Red Onion chopped: 1
White onion chopped: 1
Tomato: 3-4 large
Mushrooms: 1 pack button mushrooms
Baby corn chopped: 5-6
Capsicum chopped: 1
Garlic cloves: 3-4
Italian seasoning: 2 tsp
Zucchini shaved into stripes: 1(I just had 1. 2-3 would have been great).
Pasta boiled: 1 cup
Oil
Salt to taste
Pepper powder to taste

Method:
1. Heat oil in a pan. Add garlic and onions and saute. After the the onions turn translucent add baby corn and cook for 5 mins. Add capsicum and mushrooms.
2. Add chopped tomatoes. Let it cook till the tomatoes leave a lot of juice and sauce becomes watery. Add Italian seasoning and salt.
3. Stir fry zucchini stripes in a pan with little oil and season it with salt and pepper.
4. To serve place boiled pasta in a bowl. Pour the above sauce on the pasta. Top it with zucchini stripes. (If you have enough zucchini replace pasta with zucchini stripes).
         I read this article today: Living with less. Nice article. Otherwise it was a normal Monday ( pulled myself out of bed, dragged my feet till almost 8, then rushed to office:-))

14. Portobello Mushroom Sandwich

    Bahama Breeze was one of our favourite cafe/restaurant. We finally found Portobello mushroom at 01 MG Road mall to prepare our favourite dish. I made some adjustments as per taste (eg added olives and corn).

10. Stir-fry Soup With Thai Twist

     What can I say other than I made it when my aaji was visiting and she loved it! Its just normal stir fry soup recipe this recipe + add a spoon of dark soy sauce, Thai rice noodles and squeeze in a spoon of lemon juice just before serving.

Recipe: (serves 4)
Ingredients:
Rice noodles: 1 cup soaked in hot water and drained
Mushrooms: 1 cup chopped
Baby corn: 1 cup chopped
Carrots: 2 chopped
Cabbage : 1 cup shredded
Onion: 1/2 chopped
Garlic cloves: 3-4
Red chilies: 2
Soy sauce: 1tsp
Lemon juice: 2-3 tsp
Oil: 1 tbsp
Salt to taste

Method:
1. Soak Garlic cloves and Red chilies in a tbsp of water. Let it stand for 10-15 mins and roughly grind it.
2. In a deep pan heat oil. Add Garlic and red chili from step 1. Add Onion and cook till translucent.
3. Begin adding vegetables: Cabbage, Carrots and baby corn. Cover and cook till almost done. Add Mushrooms and cook uncovered till done. Add Soy sauce and stir.
4. Add 3 cups of warm water, Rice noodles and salt. Let it come to a boil.
5. Take off heat, add lemon juice and serve hot.
Its Yummy!!!

8. Ravioli

 Final Outcome: Very very good 

    I am jumping from Moravla, Majjige Huli to Ravioli. I have cooked recipes from different cuisines before but not in such a short time. This was "Exhausting" recipe to cook and also to eat :-).
I made mushroom ravioli. I committed an unspeakable error and had to make most of the ravioli again. I was exhausted by the end of it, and when I sat down to eat, I ate so much that i was exhausted eating it ( the next day I took 8 flight of stairs, Khichidi as diet food just to balance out excess eating of ravioli:-)).


Recipe in short:
For stuffing: cook garlic (2-3 cloves), Mushroom and little sweet corn in oil till it is dry (all water from mushrooms should evaporate). Add salt, cheese(mozzarella) and Italian seasoning. 
For Ravioli: Kneed Maida(all purpose flour), salt, little oil and pinch of soda.Let it stand for 15-20 mins covered with wet cloth.
For tomato sauce: Cook veggies (baby corn, capsicum, little onion and garlic). Add tomato puree, cheese(mozzarella), Italian seasoning, salt.

Cut small circles of the flattened dough. Place stuffing on one circle and place 2nd circle on top. Press the ends with a fork.
Boil water with a spoon of oil. Put ravioli into the boiling water 2-3 at a time. Once they are done they float to the top. 
Place them in a dish and serve with sauce.
